Better day. The man got lunch, left overs from day one. I have been spending inordinate amounts of time in the kitchen. I made milk kefir using kefir grains, sauerkraut with celery seed, and homemade ghee. For dinner, I made beef shanks, broccoli, and cabbage.

We ate the entire meal with no leftovers so I also put an elk roast in the crockpot over night with onions. It was amazing.
I had a huge headache all day, massive sugar cravings and I was so tired I took naps each time my baby napped.
The man is having a hard time with the lack of sugar and junk food. He is just hungry and thirsty all day.

Milk kefir
2quarts milk
Milk kefir grains
Add to 2quart jar and place in a dark cupboard, 24-48 hours until fermented and bubbly.

Sauerkraut
1head cabbage, thinly sliced
1t celery seed
2T sea salt
3T whey

Mix everything together, roughly, until the juices begin to flow. Place in jar with at least 1inch of head space. Leave in dark cupboard 3-7 days, pushing down the kraut 2x a day.

Ghee
Unsalted butter in a pot. Melt and bring to a continuous low boil. Stirring regularly, watch for the second time the butter foams. About 25 minutes. Take off heat and allow the foam to settle. About 5 minutes. Strain into a glass jar and leave it to set about 24 hours.

2 beef shanks
1 t fennel seeds
1t peppercorns
Salt
(Off gaps, 1 orange sliced and 1sweet potato cubed)
4cups broth
All in crockpot for 6 hours on low. Eat.

Broccoli
Boil broth, place broccoli in boiling broth for 4 minutes.

Cabbage
Thinly sliced cabbage in remaining broth. Serve with broth.

Elk roast
2lb elk rump roast
Remaining broth from shanks
Veggies
All in crockpot overnight on low. Blend some broth and veg to make ‘gravy’.
